Ingredients

  • 1 cup soaked raw cashews
  • 1 cup sweet potato puree
  • ¼ cup nutritional yeast
  • ½ teaspoon salt
  • ½ cup vegetable broth
  • 1 teaspoon apple cider vinegar

Instructions

  1. Soak the cashews in water overnight or for at least 12 hours.
  2. After soaking, strain and rinse the cashews, then place them in a high-speed blender.
  3. Add the sweet potato puree, nutritional yeast, salt, vegetable broth, and apple cider vinegar to the blender.
  4. Blend on high until the mixture is smooth, scraping the sides as needed. If the sauce is too thick, add more vegetable broth by the tablespoon.
  5. If serving hot, transfer the sauce to a medium saucepan and heat over medium/low until warmed, adding more broth if it thickens.
  6. Serve the sauce over pasta, steamed vegetables, or as a dip.
