Vegan Cheese Sauce

apple cider vinegar
Instructions
- Soak the cashews in water overnight or for at least 12 hours.
- After soaking, strain and rinse the cashews, then place them in a high-speed blender.
- Add the sweet potato puree, nutritional yeast, salt, vegetable broth, and apple cider vinegar to the blender.
- Blend on high until the mixture is smooth, scraping the sides as needed. If the sauce is too thick, add more vegetable broth by the tablespoon.
- If serving hot, transfer the sauce to a medium saucepan and heat over medium/low until warmed, adding more broth if it thickens.
- Serve the sauce over pasta, steamed vegetables, or as a dip.
