All-Purpose Vegan Cheese Sauce

Ingredients

  • ¼ cup raw cashews
  • cups peeled and diced yellow or red potatoes
  • ½ cup peeled and diced carrots
  • 2 to 3 tablespoons nutritional yeast
  • 2 tablespoons grapeseed oil or refined coconut oil
  • tablespoons water
  • teaspoons fresh lemon juice
  • ½ teaspoon fine sea salt
  • 1 medium garlic clove
  • ½ to ¾ teaspoon white wine vinegar
  • to taste Sriracha or other hot sauce (optional)

Instructions

  1. Soak the cashews in water overnight or for at least 30 minutes in hot water, then drain and rinse.
  2. Boil or steam the potatoes and carrots until fork tender, about 10 to 15 minutes, then drain.
  3. Blend all ingredients except hot sauce in a high-speed blender until smooth, adding water or oil if necessary.
  4. Taste and adjust seasonings, adding hot sauce if desired.
