All-Purpose Vegan Cheese Sauce

nutritional yeast

grapeseed oil or refined coconut oil

white wine vinegar

Sriracha or other hot sauce (optional)
Instructions
- Soak the cashews in water overnight or for at least 30 minutes in hot water, then drain and rinse.
- Boil or steam the potatoes and carrots until fork tender, about 10 to 15 minutes, then drain.
- Blend all ingredients except hot sauce in a high-speed blender until smooth, adding water or oil if necessary.
- Taste and adjust seasonings, adding hot sauce if desired.
