Instructions
- Preheat the oven to 350 degrees.
- Peel and cube the sweet potato, then boil for 25 minutes.
- Strain and mash the sweet potato in a large bowl.
- For the sweet potato layer, mix the syrup, brown sugar, cream cheese, softened butter, vanilla, nutmeg, cinnamon, baking powder, and baking soda until smooth, adding eggs one at a time.
- For the crust layer, combine flour, brown sugar, sugar, melted butter, and baking powder until crumbly.
- Coat muffin cups with cooking spray or use liners.
- Add 2 tablespoons of the crust mixture to each muffin cup and flatten.
- Fill each cup with the sweet potato mixture.
- Bake for 40 minutes and allow to cool.
