Ingredients

Sweet Potato Layer

  • 1 large sweet potato
  • ¼ cup pure cane syrup
  • ½ cup brown sugar
  • 8 oz cream cheese
  • 4 tbsp butter, softened
  • 2 tbsp vanilla extract
  • 1 tsp nutmeg
  • 1 tsp ground cinnamon
  • ½ tsp baking powder
  • 1 tsp baking soda
  • 3 large eggs

Crust Layer

  • 2 cups all-purpose flour
  • 1 cup brown sugar
  • 1 cup sugar
  • 1 cup butter, melted
  • ½ tsp baking powder

Instructions

  1. Preheat the oven to 350 degrees.
  2. Peel and cube the sweet potato, then boil for 25 minutes.
  3. Strain and mash the sweet potato in a large bowl.
  4. For the sweet potato layer, mix the syrup, brown sugar, cream cheese, softened butter, vanilla, nutmeg, cinnamon, baking powder, and baking soda until smooth, adding eggs one at a time.
  5. For the crust layer, combine flour, brown sugar, sugar, melted butter, and baking powder until crumbly.
  6. Coat muffin cups with cooking spray or use liners.
  7. Add 2 tablespoons of the crust mixture to each muffin cup and flatten.
  8. Fill each cup with the sweet potato mixture.
  9. Bake for 40 minutes and allow to cool.
