Instructions
- Boil the sweet potatoes whole in their skin for 50 to 55 minutes until soft.
- Run cold water over the sweet potatoes and remove the skin.
- Blend the peeled sweet potatoes in a blender until smooth.
- In a bowl, mix the sweet potatoes with the softened butter.
- Using an electric mixer, add the brown sugar, milk, eggs, cinnamon, and vanilla, beating until smooth.
- Pour the filling into the unbaked pie crust.
- Bake at 350°F for 55 to 60 minutes, or until a knife inserted in the center comes out clean.
