Ingredients

The filling

  • lbs sweet potatoes
  • 2 tbsp light butter, softened
  • ¾ cup light brown sugar, not packed
  • ½ cup 1% milk
  • 2 large eggs
  • ½ tsp ground pumpkin pie spice
  • ½ tsp ground cinnamon
  • 1 tsp vanilla extract

The crust

  • 1 9 inch unbaked pie crust

Instructions

  1. Boil the sweet potatoes whole in their skin for 50 to 55 minutes until soft.
  2. Run cold water over the sweet potatoes and remove the skin.
  3. Blend the peeled sweet potatoes in a blender until smooth.
  4. In a bowl, mix the sweet potatoes with the softened butter.
  5. Using an electric mixer, add the brown sugar, milk, eggs, cinnamon, and vanilla, beating until smooth.
  6. Pour the filling into the unbaked pie crust.
  7. Bake at 350°F for 55 to 60 minutes, or until a knife inserted in the center comes out clean.
