Instructions
- Whisk together flour and salt, then cut in cubed butter until pea-sized granules form.
- Add ice water gradually until the mixture forms moist granules, then shape into a ball and refrigerate for 30 minutes.
- In a separate bowl, mix brown sugar, flour, spices, and salt, then beat in eggs one at a time.
- Add sweet potatoes, evaporated milk, and vanilla extract, and mix until smooth.
- Preheat the oven to 425°F.
- Roll out the chilled dough and place it in a deep-dish pie plate, trimming the edges.
- Pour the sweet potato mixture into the crust and bake at 425°F for 15 minutes.
- Reduce the oven temperature to 350°F and bake for an additional 30-40 minutes until set.
- Allow the pie to cool completely.
- Whip heavy cream and gradually add sugar, maple syrup, vanilla, and salt until stiff peaks form.
- Serve slices of pie topped with whipped cream.
