Ingredients

The pie crust

  • 1 ¾ cups all-purpose flour

The pie filling

  • ¾ cup dark brown sugar
  • 1 tablespoon all-purpose flour or cornstarch
  • 1 ½ teaspoons ground cinnamon
  • ¾ teaspoon ground ginger
  • ½ teaspoon coarse salt
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • 2 large eggs
  • 2 ½ cups pureed or mashed sweet potatoes
  • 1 can (12-ounce) evaporated milk
  • 2 teaspoons pure vanilla extract

The whipped cream

  • 1 cup heavy whipping cream
  • 3 tablespoons granulated sugar
  • 3 tablespoons pure maple syrup
  • 1 teaspoon pure vanilla extract

Instructions

  1. Whisk together flour and salt, then cut in cubed butter until pea-sized granules form.
  2. Add ice water gradually until the mixture forms moist granules, then shape into a ball and refrigerate for 30 minutes.
  3. In a separate bowl, mix brown sugar, flour, spices, and salt, then beat in eggs one at a time.
  4. Add sweet potatoes, evaporated milk, and vanilla extract, and mix until smooth.
  5. Preheat the oven to 425°F.
  6. Roll out the chilled dough and place it in a deep-dish pie plate, trimming the edges.
  7. Pour the sweet potato mixture into the crust and bake at 425°F for 15 minutes.
  8. Reduce the oven temperature to 350°F and bake for an additional 30-40 minutes until set.
  9. Allow the pie to cool completely.
  10. Whip heavy cream and gradually add sugar, maple syrup, vanilla, and salt until stiff peaks form.
  11. Serve slices of pie topped with whipped cream.
