Ingredients

Crust

  • 1 unbaked Flaky Pie Crust
  • 1 large egg (beaten with 1 Tablespoon milk or heavy cream for egg wash)

Filling

  • 1 lb sweet potatoes (about 2 medium)
  • 6 Tablespoons unsalted butter (softened to room temperature)
  • 1 cup packed light or dark brown sugar
  • ½ cup heavy cream
  • 2 large eggs
  • 2 Tablespoons all-purpose flour
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground ginger
  • teaspoon salt
  • optional whipped cream (for serving)

Instructions

  1. Prepare the pie dough and chill it for at least 2 hours.
  2. Boil the sweet potatoes until soft, about 45-50 minutes.
  3. Roll out the chilled pie dough and place it in a 9-inch pie dish.
  4. Peel and chunk the boiled sweet potatoes, then mash them until smooth.
  5. Mix in the remaining filling ingredients and beat until smooth.
  6. Spread the filling into the prepared pie crust and brush the edges with egg wash.
  7. Bake at 350°F (177°C) for 55-60 minutes until the center is slightly jiggly.
  8. Cool the pie for at least 2 hours before serving.
