Instructions
Prepare the pie dough and chill it for at least 2 hours.
Boil the sweet potatoes until soft, about 45-50 minutes.
Roll out the chilled pie dough and place it in a 9-inch pie dish.
Peel and chunk the boiled sweet potatoes, then mash them until smooth.
Mix in the remaining filling ingredients and beat until smooth.
Spread the filling into the prepared pie crust and brush the edges with egg wash.
Bake at 350°F (177°C) for 55-60 minutes until the center is slightly jiggly.
Cool the pie for at least 2 hours before serving.
