Instructions
- Prepare the pie crust and let it rest.
- Roll out the dough and fit it into a pie dish, then freeze it.
- Boil sweet potato cubes until tender, then mash or puree them.
- Preheat the oven to 350°F.
- Blend eggs, sugars, spices, salt, and coconut milk until smooth, then add the sweet potato and blend again.
- Brush the edges of the pie crust with egg wash, pour in the filling, and bake for 45 to 50 minutes.
- Let the pie cool for 3 to 4 hours to set.
- For the topping, whisk water, sugar, egg whites, cream of tartar, and salt over simmering water until dissolved, then beat until stiff peaks form.
- Spread the marshmallow topping on the pie and torch it for a browned effect before serving.
