Ingredients

The filling

  • 1 pie crust store-bought or homemade
  • pounds sweet potatoes
  • 3 large eggs
  • ¼ cup granulated sugar
  • ¼ cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon kosher salt
  • 1 cup coconut milk or heavy whipping cream

The marshmallow topping

  • 2 tablespoons water
  • cup granulated sugar
  • 2 large egg whites
  • 1 pinch cream of tartar
  • 1 pinch kosher salt
  • ¼ teaspoon pure vanilla extract

Instructions

  1. Prepare the pie crust and let it rest.
  2. Roll out the dough and fit it into a pie dish, then freeze it.
  3. Boil sweet potato cubes until tender, then mash or puree them.
  4. Preheat the oven to 350°F.
  5. Blend eggs, sugars, spices, salt, and coconut milk until smooth, then add the sweet potato and blend again.
  6. Brush the edges of the pie crust with egg wash, pour in the filling, and bake for 45 to 50 minutes.
  7. Let the pie cool for 3 to 4 hours to set.
  8. For the topping, whisk water, sugar, egg whites, cream of tartar, and salt over simmering water until dissolved, then beat until stiff peaks form.
  9. Spread the marshmallow topping on the pie and torch it for a browned effect before serving.
