Instructions
- Prepare the pie crust in advance and chill.
- Boil sweet potatoes until soft, then peel and mash.
- Roll out the chilled pie dough and place it in a pie dish.
- Preheat the oven to 350°F (177°C).
- Blend the sweet potatoes with the remaining filling ingredients until smooth.
- Spread the filling into the prepared pie crust.
- Bake for 55-60 minutes until the center is slightly jiggly.
- Cool the pie for at least 2 hours.
- Prepare the marshmallow meringue by heating egg whites, sugar, and cream of tartar over simmering water until dissolved, then whip until stiff peaks form.
- Spread the marshmallow topping on the cooled pie and serve.
