Ingredients

Crust

  • 1 unbaked Flaky Pie Crust
  • 1 large egg (for egg wash)
  • 1 Tablespoon milk or heavy cream

Filling

  • lbs sweet potatoes (about 2 medium/large)
  • 6 Tablespoons unsalted butter, super soft
  • cup packed light or dark brown sugar
  • ½ cup heavy cream
  • ¼ cup bourbon
  • 1 large egg
  • 2 large egg yolks
  • 1 Tablespoon all-purpose flour
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • teaspoon salt

Marshmallow Meringue

  • 2 large egg whites
  • ½ cup granulated sugar
  • ¼ teaspoon cream of tartar
  • ½ teaspoon pure vanilla extract

Instructions

  1. Prepare the pie crust in advance and chill.
  2. Boil sweet potatoes until soft, then peel and mash.
  3. Roll out the chilled pie dough and place it in a pie dish.
  4. Preheat the oven to 350°F (177°C).
  5. Blend the sweet potatoes with the remaining filling ingredients until smooth.
  6. Spread the filling into the prepared pie crust.
  7. Bake for 55-60 minutes until the center is slightly jiggly.
  8. Cool the pie for at least 2 hours.
  9. Prepare the marshmallow meringue by heating egg whites, sugar, and cream of tartar over simmering water until dissolved, then whip until stiff peaks form.
  10. Spread the marshmallow topping on the cooled pie and serve.
