Chili Lime Corn Salad

Ingredients

  • 8 ears fresh corn
  • ¼ cup chopped parsley
  • 3 tbsp finely chopped sundried tomatoes
  • 2 tbsp extra-virgin olive oil
  • ½ lime grated zest and juice
  • ½ tsp chili powder
  • ½ tsp salt
  • ¼ tsp cayenne pepper
  • tsp ground cumin

Instructions

  1. Cut the kernels off the cooked corn and place them in a large bowl.
  2. Add the chopped parsley, sundried tomatoes, olive oil, lime juice and zest, salt, chili powder, ground cumin, and cayenne pepper to the bowl.
  3. Toss all the ingredients together to combine.
  4. Serve immediately or refrigerate for about an hour to allow flavors to meld.
