Warm Mexican Corn Salad

Ingredients

  • 4 large fresh cobs of corn
  • 2 tbsp light mayonnaise
  • 2 tbsp fat-free Greek yogurt
  • ½ tsp chili powder
  • 1 tbsp fresh lime juice
  • 1 tbsp minced cilantro
  • 2 tbsp scallions, minced
  • ½ cup cotija cheese, grated
  • 5 pieces lime wedges for serving

Instructions

  1. Boil the corn in water for 5 minutes, then remove from heat.
  2. Once cool enough to handle, cut the corn off the cob.
  3. In a large bowl, combine mayonnaise, yogurt, chili powder, and lime juice, and mix well.
  4. Add the corn, cilantro, scallions, and cheese to the bowl and toss to combine.
  5. Serve with lime wedges.
