Instructions
- Heat a skillet over high heat with avocado oil and add corn, charring it for 4-6 minutes.
- Transfer the charred corn to a large bowl and let it cool.
- Chop the red bell pepper, red onion, and cilantro, then add them to the bowl with corn.
- In a small bowl, whisk together Greek yogurt, lime juice, salt, chili powder, cumin, and smoked paprika, then stir in the cotija cheese.
- Combine the yogurt sauce with the corn mixture and top with additional cheese and cilantro.
