Ingredients

The salad

  • 4 cups corn
  • 1 tbsp avocado oil
  • ½ red bell pepper diced
  • ½ red onion diced
  • 1 jalapeño deseeded and diced
  • ½ cup cilantro

The dressing

  • ½ cup Greek yogurt
  • 1 large lime
  • 1 tsp salt
  • ½ tsp chili powder
  • ½ tsp cumin
  • ½ tsp smoked paprika
  • cup crumbled cotija cheese

Instructions

  1. Heat a skillet over high heat with avocado oil and add corn, charring it for 4-6 minutes.
  2. Transfer the charred corn to a large bowl and let it cool.
  3. Chop the red bell pepper, red onion, and cilantro, then add them to the bowl with corn.
  4. In a small bowl, whisk together Greek yogurt, lime juice, salt, chili powder, cumin, and smoked paprika, then stir in the cotija cheese.
  5. Combine the yogurt sauce with the corn mixture and top with additional cheese and cilantro.
