Chili Lime Grilled Corn Salad

Instructions
- 1. Heat the grill to medium high heat or 400°F.
- 2. Grill the sweet corn for 3-4 minutes per side until slightly charred.
- 3. Remove the corn from the grill and cut the kernels off the cob into a large bowl.
- 4. Add the piquillo peppers, fresh cilantro, queso fresco, smoked paprika, chipotle chili powder, sea salt, fresh lime juice, and olive oil to the bowl with corn kernels.
- 5. Toss the mixture to combine and serve warm or cold.
