Instructions
- Preheat the grill to medium heat.
- Grill the corn in its husks for 20 minutes, rotating every 5 minutes.
- In a large bowl, combine garlic, jalapeño, and a pinch of kosher salt.
- Add lime zest, lime juice, and olive oil to the bowl and whisk to combine.
- Gently toss in avocado, tomatoes, scallions, and cilantro.
- Remove corn from the grill, cool slightly, then slice kernels into the bowl.
- Toss everything together and season with salt and pepper.
