Grilled Corn and Avocado Salsa

Ingredients

  • 4 ears corn
  • 1 medium red onion, chopped
  • 1 cup cherry tomatoes, halved
  • ½ cup fresh cilantro, chopped
  • 1 tsp sea salt
  • ½ tsp black pepper
  • 1 tbsp extra-virgin olive oil
  • 2 small limes, juiced
  • 2 medium avocados, chopped
  • 1 optional jalapeño, seeded and diced

Instructions

  1. Preheat the grill to medium-high and grill the corn for 3 to 5 minutes per side until charred.
  2. Shuck the corn and place the kernels in a large bowl.
  3. Add the red onion, cherry tomatoes, cilantro, sea salt, black pepper, olive oil, and jalapeño to the bowl.
  4. Squeeze in the lime juice and toss the ingredients together.
  5. Gently fold in the chopped avocados and serve immediately.
