Avocado Corn Salsa

Ingredients

  • 2 medium avocados
  • 3 medium tomatoes
  • 1 medium red bell pepper, diced
  • 2 medium green onions, diced
  • 1 cup frozen sweet corn, thawed
  • 1 can (2.25-ounce) black olives, sliced, drained
  • 3 cloves garlic, minced
  • ¼ jalapeno pepper finely diced
  • ¼ cup chopped cilantro or parsley
  • 1 lemon juiced
  • as desired optional black pepper and sea salt

Instructions

  1. Mash one avocado in a bowl after removing the pit and flesh.
  2. Cube the second avocado and add it to the bowl.
  3. Chop the tomatoes and add them to the bowl along with their juice.
  4. Add the bell pepper, green onion, corn, olives, garlic, jalapeno, and cilantro or parsley to the bowl and mix gently.
  5. Add lemon juice and season with black pepper and sea salt if desired, then mix again.
  6. Chill the salsa until ready to serve.
