Ingredients

The noodles

  • 16 oz egg noodles

The sauce

  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 28 oz crushed tomatoes, canned
  • 14 oz diced tomatoes, canned
  • 3 cloves garlic, finely chopped
  • 1 cup meatless ground beef (optional)
  • ½ cup cream cheese
  • to taste salt
  • to taste freshly ground pepper

Instructions

  1. 1. Boil water in a saucepan and cook the egg noodles according to the package instructions.
  2. 2. In another saucepan, heat olive oil over medium-high heat and sauté the chopped onion for 5 minutes.
  3. 3. Add the crushed tomatoes, diced tomatoes, garlic, and optional meatless ground beef to the saucepan and let it simmer for 20 minutes.
  4. 4. Stir in the cream cheese until well combined.
  5. 5. Rinse the cooked noodles, return them to the saucepan, and mix in the sauce.
  6. 6. Serve the dish warm.
