Mango & Date Parfaits with Cardamom Greek Yogurt

The fruit and toppings

ripe mango, cubed

Instructions
- Combine yogurt, honey, vanilla, and spices in a bowl and stir well.
- Layer half of the mango cubes in the bottom of two tall glasses or shallow bowls.
- Dollop the yogurt mixture over the mango layer.
- Top with the remaining mango cubes.
- Sprinkle with pistachios and chopped dates.
- Refrigerate any remaining yogurt for later use.
