Mango & Date Parfaits with Cardamom Greek Yogurt

Ingredients

The yogurt mixture

  • 8 ounces lowfat plain Greek yogurt
  • 1 tablespoon honey
  • 1 teaspoon honey
  • ΒΌ teaspoon vanilla extract
  • 1 pinch ground cardamom
  • 1 pinch ground cinnamon
  • 1 pinch ground ginger

The fruit and toppings

  • 1 large ripe mango, cubed
  • 2 tablespoons halved pistachios
  • 2 tablespoons chopped dates

Instructions

  1. Combine yogurt, honey, vanilla, and spices in a bowl and stir well.
  2. Layer half of the mango cubes in the bottom of two tall glasses or shallow bowls.
  3. Dollop the yogurt mixture over the mango layer.
  4. Top with the remaining mango cubes.
  5. Sprinkle with pistachios and chopped dates.
  6. Refrigerate any remaining yogurt for later use.
