Ingredients

The cod

  • 4 filets cod, skin removed
  • ¼ cup Bob's Red Mill Almond Flour
  • ¼ cup panko bread crumbs
  • ¼ tsp ground paprika
  • 1 tsp kosher salt
  • ½ tsp ground pepper
  • 1 tsp garlic powder
  • 1 egg
  • ¼ cup Bob's Red Mill All-Purpose Flour
  • avocado oil for frying

The gremolata

  • ¼ cup extra virgin olive oil
  • cup fresh chopped basil
  • 1 jalapeno finely chopped
  • ¼ cup finely chopped green olives
  • ½ cup crumbled feta cheese
  • 1 tbsp lemon juice
  • 1 zest lemon
  • ½ tsp kosher salt

The sides

  • 1 lb green beans, trimmed
  • cup slivered almonds, toasted

Instructions

  1. Prepare the gremolata by mixing basil, jalapeno, olives, feta, lemon zest, lemon juice, and salt in a bowl.
  2. Blanch green beans in boiling salted water for 4 minutes, then cool in ice water and drain.
  3. Set up breading stations with flour, whisked egg, and a mixture of almond flour, panko, paprika, salt, pepper, and garlic powder.
  4. Season cod filets, dredge in flour, dip in egg, and coat with the almond flour mixture.
  5. Toast slivered almonds in a nonstick pan over medium-low heat until golden brown.
  6. Heat avocado oil in a pan and fry the breaded cod filets for 5 minutes on each side until cooked through.
  7. Assemble the dish by mixing green beans with gremolata and almonds, serving with cod filets topped with gremolata.
