Instructions
- Prepare the gremolata by mixing basil, jalapeno, olives, feta, lemon zest, lemon juice, and salt in a bowl.
- Blanch green beans in boiling salted water for 4 minutes, then cool in ice water and drain.
- Set up breading stations with flour, whisked egg, and a mixture of almond flour, panko, paprika, salt, pepper, and garlic powder.
- Season cod filets, dredge in flour, dip in egg, and coat with the almond flour mixture.
- Toast slivered almonds in a nonstick pan over medium-low heat until golden brown.
- Heat avocado oil in a pan and fry the breaded cod filets for 5 minutes on each side until cooked through.
- Assemble the dish by mixing green beans with gremolata and almonds, serving with cod filets topped with gremolata.
