Ingredients

The cookie dough

  • 1 cup all-purpose flour
  • tsp. baking soda
  • tsp. ground cinnamon
  • ¼ tsp. ground cloves
  • ¾ cup rye flour
  • 3 tsp. ground ginger
  • tsp. kosher salt
  • cup finely chopped crystallized ginger
  • cup robust-flavored (dark) molasses
  • ¼ cup dark brown sugar
  • ¾ cup unsalted butter
  • 2 Tbsp. unsalted butter
  • 2 large egg yolks

The streusel topping

  • 6 Tbsp. rye flour
  • 1 tsp. ground ginger
  • ¼ tsp. kosher salt
  • 6 Tbsp. raw sugar

Instructions

  1. Combine all-purpose flour, baking soda, cinnamon, cloves, ¾ cup rye flour, 2 tsp. ground ginger, and 1 tsp. salt in a bowl, then add crystallized ginger.
  2. Mix molasses, brown sugar, and ¾ cup melted butter, then add egg yolks and combine until dark.
  3. Fold dry ingredients into the wet mixture until no flour streaks remain and let sit for 30 minutes.
  4. Preheat oven to 375° and prepare the streusel by mixing raw sugar, remaining rye flour, ginger, and salt, then combine with remaining butter.
  5. Roll dough into balls, coat in streusel, and place on baking sheets, baking until slightly cracked and set, about 8–10 minutes.
  6. Cool cookies on a wire rack and repeat with remaining dough.
