Instructions
- Combine all-purpose flour, baking soda, cinnamon, cloves, ¾ cup rye flour, 2 tsp. ground ginger, and 1 tsp. salt in a bowl, then add crystallized ginger.
- Mix molasses, brown sugar, and ¾ cup melted butter, then add egg yolks and combine until dark.
- Fold dry ingredients into the wet mixture until no flour streaks remain and let sit for 30 minutes.
- Preheat oven to 375° and prepare the streusel by mixing raw sugar, remaining rye flour, ginger, and salt, then combine with remaining butter.
- Roll dough into balls, coat in streusel, and place on baking sheets, baking until slightly cracked and set, about 8–10 minutes.
- Cool cookies on a wire rack and repeat with remaining dough.
