Swedish Rye Cookies
Ingredients

fine grain natural cane sugar, sifted
For finishing

large grain sugar (for sprinkling)

Instructions
- 1. Line baking sheets with parchment paper.
- 2. In a bowl, combine the flours and salt, then set aside.
- 3. Beat the cream cheese until fluffy, then add the butter and mix until combined.
- 4. Add the sugar and mix well, then stir in the flour mixture until just combined.
- 5. Knead the dough lightly, shape into a ball, flatten, wrap in plastic, and chill in the refrigerator.
- 6. Preheat the oven to 350°F and prepare your work surface with flour.
- 7. Roll out the dough to ¼-inch thickness and cut into shapes.
- 8. Place cookies on the baking sheets, sprinkle with large grain sugar, and bake for 6-7 minutes until golden at the edges.
- 9. Allow to cool and dust with powdered sugar.
