Ingredients

The dough

  • 1 cup rye flour
  • 1 cup whole wheat pastry flour
  • ½ teaspoon fine grain sea salt
  • ½ cup cream cheese, room temperature
  • ½ cup unsalted butter, room temperature
  • ½ cup fine grain natural cane sugar, sifted

For finishing

  • to taste large grain sugar (for sprinkling)
  • to taste organic powdered sugar (for snow)

Instructions

  1. 1. Line baking sheets with parchment paper.
  2. 2. In a bowl, combine the flours and salt, then set aside.
  3. 3. Beat the cream cheese until fluffy, then add the butter and mix until combined.
  4. 4. Add the sugar and mix well, then stir in the flour mixture until just combined.
  5. 5. Knead the dough lightly, shape into a ball, flatten, wrap in plastic, and chill in the refrigerator.
  6. 6. Preheat the oven to 350°F and prepare your work surface with flour.
  7. 7. Roll out the dough to ¼-inch thickness and cut into shapes.
  8. 8. Place cookies on the baking sheets, sprinkle with large grain sugar, and bake for 6-7 minutes until golden at the edges.
  9. 9. Allow to cool and dust with powdered sugar.
