Ingredients

The dough

  • 7 tbsp unsalted butter
  • cups whole milk
  • 2 tsp active dry yeast
  • cups flour
  • ¼ cup sugar
  • tsp cardamom seeds
  • 2 tsp kosher salt

The filling and topping

  • ½ cup granulated sugar
  • 7 tbsp unsalted butter
  • 1 tbsp ground cinnamon
  • tsp cardamom seeds
  • 1 each egg
  • to taste none pearl sugar

Instructions

  1. Melt butter and stir in heated milk and yeast; let sit until foamy.
  2. Whisk together flour, sugar, cardamom, and salt, then stir in the yeast mixture.
  3. Knead the dough briefly until smooth, then let it rise until doubled in size.
  4. Mix filling ingredients until smooth.
  5. Roll dough into a rectangle, spread filling, and roll tightly.
  6. Let the rolled dough rise again until doubled.
  7. Preheat oven and prepare the dough with cuts and toppings.
  8. Bake until golden brown and cool before serving.
