Finnish Cardamom Rolls

Ingredients

Dough

  • 1 cup milk or half and half, lukewarm
  • ¼ cup sugar
  • 1 teaspoon vanilla
  • 1 package active dry yeast (2 1/4 teaspoons)
  • 1 tablespoon cardamom seeds, toasted and crushed or ground cardamom
  • ½ teaspoon salt
  • ½ cup butter, softened
  • 2 units eggs
  • 4 cups all-purpose flour

Filling

  • ¼ cup sugar
  • 1 teaspoon ground cardamom
  • ¼ cup butter, softened
  • 1 unit egg, for egg wash, whisked
  • to taste unit Turbinado or rock sugar, for sprinkling

Instructions

  1. Combine warm milk, a pinch of sugar, and yeast; let stand until frothy.
  2. Beat eggs, sugar, and vanilla until dissolved, then add milk mixture and flour, mixing until smooth.
  3. Add butter, cardamom, and salt, then gradually add flour until dough is soft and can be kneaded.
  4. Cover and let rise in a warm spot until doubled, about 2 hours.
  5. Mix sugar and cardamom for filling.
  6. Roll dough into a rectangle, spread with butter, and sprinkle with cardamom sugar.
  7. Roll into a log and cut into fat triangles.
  8. Place on a baking sheet with the narrow tip facing up and let rise for 40 minutes.
  9. Brush with egg wash, sprinkle with sugar, and bake at 350°F for 18-20 minutes.
