Swedish Braided Cardamom Bread

Ingredients

The dough

  • 2 cups whole milk
  • cup granulated sugar
  • ½ cup unsalted butter
  • 2 packets active dry yeast or instant yeast
  • 6 cups all-purpose flour, divided
  • ¾ teaspoon kosher salt
  • 2 teaspoons ground cardamom
  • 2 large eggs, divided
  • 1 tablespoon whole milk

The topping

  • 2 tablespoons Swedish pearl sugar

Instructions

  1. Warm the milk, sugar, and butter in a saucepan until the butter melts, then cool to warm bath temperature.
  2. Stir in the yeast and let it sit for 5 minutes to activate.
  3. In a mixing bowl, combine the milk mixture with flour, salt, cardamom, and one egg.
  4. Add more flour gradually until the dough forms a ball and is not sticky.
  5. Transfer the dough to an oiled bowl, cover, and let it rise for about 1 hour until doubled in size.
  6. Punch down the dough and knead for 1-2 minutes, then let it rest for 10 minutes.
  7. Divide the dough into six equal portions and roll each into a rope.
  8. Braid three ropes together to form a loaf and tuck the ends under.
  9. Repeat with the remaining dough to form a second loaf.
  10. Place the loaves on a baking sheet and let them rise for 30 minutes.
  11. Preheat the oven to 375°F.
  12. Prepare an egg wash with the remaining egg and milk, brush it on the loaves, and sprinkle with pearl sugar.
  13. Bake for about 20 minutes until browned, then cool before slicing.
