Ingredients

Dough

  • ¼ cup unsalted butter
  • ¾ cup whole milk
  • 1 tablespoon pure vanilla extract
  • cups bread flour
  • ¼ cup white granulated sugar
  • 1 package instant dry yeast
  • 1 teaspoon kosher salt
  • 1 large egg
  • 1 large egg yolk

Filling

  • 2 tablespoons ground cinnamon
  • 2 tablespoons white sugar
  • 2 tablespoons brown sugar
  • a pinch kosher salt
  • 3 tablespoons unsalted butter (melted)

Topping

  • 1 large egg (beaten)

Instructions

  1. Prepare a loaf pan by spraying it with cooking spray.
  2. Melt the butter in a saucepan, then add the milk and vanilla off the heat.
  3. In a stand mixer, combine flour, sugar, yeast, and salt.
  4. Add the egg, egg yolk, and the milk/butter mixture, then knead until smooth.
  5. Transfer the dough to a greased bowl and let it rise in a warm place for 1 hour.
  6. Mix the filling ingredients in a small bowl.
  7. Punch down the dough and roll it out into an 8x18-inch rectangle.
  8. Brush half of the melted butter on the dough and sprinkle with the filling mixture.
  9. Pour the remaining butter over the filling and roll the dough tightly.
  10. Pinch the seams and place the dough seam-side down in the loaf pan.
  11. Cover and let it rise for another hour until puffy.
  12. Preheat the oven to 350°F and brush the top with the egg wash.
  13. Bake for about 35 minutes until golden brown.
  14. Cool in the pan for 10 minutes, then transfer to a cooling rack.
