Ingredients

The dough

  • ½ cup water
  • ½ cup whole milk
  • 2 and ¼ teaspoons instant or active dry yeast
  • ¼ cup granulated sugar
  • 4 Tablespoons unsalted butter
  • 3 cups bread flour
  • 1 teaspoon salt

The swirl & topping

  • 1 egg white beaten
  • ¼ cup granulated sugar
  • 2 teaspoons ground cinnamon
  • 1 Tablespoon unsalted butter

Instructions

  1. Prepare the dough by whisking warm water, warm milk, yeast, and 2 Tablespoons of sugar, then let it sit until foamy.
  2. Add the remaining sugar, butter, 1 cup of flour, and salt, and mix until combined.
  3. Knead the dough for 8-10 minutes until soft and slightly tacky.
  4. Let the dough rise in a greased bowl until doubled in size, about 1.5-2 hours.
  5. Prepare the swirl mixture by combining sugar and cinnamon in a small bowl.
  6. Punch down the dough and roll it into an 8x20 inch rectangle.
  7. Brush the dough with beaten egg white and sprinkle the cinnamon-sugar mixture on top.
  8. Roll the dough into a log and place it seam-side down in a greased loaf pan.
  9. Cover and let it rise for 1 hour until it rises above the pan.
  10. Preheat the oven to 350°F and brush the top of the loaf with melted butter.
  11. Bake for 35-45 minutes until golden brown and sounds hollow when tapped.
  12. Cool the bread in the pan for a few minutes before transferring it to a cooling rack.
