Instructions
- Activate the yeast in warm water for 5 minutes.
- Mix the all-purpose flour, white whole wheat flour, vital wheat gluten, salt, and cinnamon in a bowl.
- Add the egg, milk, and shortening to the yeast mixture, then combine with the dry ingredients.
- Knead the dough until it is soft and slightly tacky.
- Let the dough rise in a covered bowl until it doubles in size.
- Prepare the cinnamon-sugar mixture in a separate bowl.
- Divide the dough, shape into rectangles, and sprinkle with the cinnamon-sugar mixture.
- Roll the dough and place in greased loaf pans, then let rise again until nearly doubled.
- Preheat the oven and bake the loaves until golden and hollow-sounding.
- Cool the bread for at least 1 hour before serving.
