Instructions
- Preheat the oven to 350°F (177°C) and prepare a loaf pan with nonstick spray.
- Mix the granulated sugar and ground cinnamon for the swirl.
- In a large bowl, whisk together flour, baking soda, and salt.
- In another bowl, whisk the egg and granulated sugar until combined, then add oil, sour cream, milk, and vanilla extract.
- Combine wet and dry ingredients, mixing until just combined.
- Pour half of the batter into the loaf pan and sprinkle with most of the cinnamon sugar mixture.
- Spread the remaining batter on top, sprinkle with the remaining cinnamon sugar, and swirl with a knife.
- Bake for 50-65 minutes, covering with foil if necessary, until a toothpick comes out clean.
- Allow to cool in the pan for 1 hour, then remove and cool completely on a wire rack.
- Drizzle with icing if desired, slice, and serve.
