Ingredients

Dough

  • ¼ cup lukewarm milk
  • 1 tablespoon active dry yeast
  • 3 cups all-purpose flour
  • 3 tablespoons white granulated sugar
  • 1 teaspoon kosher salt
  • 3 large eggs, beaten
  • 1 teaspoon pure vanilla extract
  • ½ cup unsalted butter, at room temperature

Chocolate Cardamom Filling

  • 3 ounces semi-sweet chocolate, chopped or chocolate chips
  • ¼ cup unsalted butter, at room temperature
  • 2 tablespoons brown sugar
  • 2 tablespoons white granulated sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon pure vanilla extract
  • a pinch kosher salt
  • a pinch cardamom (optional)

Cream Cheese Glaze

  • 4 tablespoons unsalted butter, at room temperature
  • 4 ounces cream cheese, at room temperature
  • 2 cups powdered sugar, sifted
  • ¼ teaspoon pure vanilla extract
  • a pinch sea salt for topping
  • 1 tablespoon heavy cream

Instructions

  1. Prepare the dough by mixing lukewarm milk and yeast, letting it activate.
  2. Combine flour, sugar, and salt in a bowl, then add to the yeast mixture along with beaten eggs and vanilla.
  3. Knead the dough until smooth, then let it rise in the fridge for 1 to 2 hours.
  4. Melt the chocolate for the filling and mix with butter, sugars, vanilla, cardamom, and salt until smooth.
  5. Roll out the dough and spread the filling evenly, then roll it up and slice into rolls.
  6. Chill the rolls in the freezer for easier slicing, then place in a greased baking dish to rise again.
  7. Preheat the oven and bake the rolls until golden.
  8. Prepare the cream cheese glaze by mixing butter and cream cheese, then adding sugar, cardamom, vanilla, and cream until fluffy.
  9. Pour the glaze over the warm rolls before serving.
