Danish Braided Strawberry Bread

Ingredients

Dough

  • 2 large eggs, lightly beaten
  • ¾ cup lukewarm water
  • 2 tablespoons lukewarm water
  • teaspoons granulated yeast
  • teaspoons kosher salt
  • ¼ cup honey
  • 4 tablespoons unsalted butter, melted
  • cups bread flour

Cream Cheese Filling

  • 8 ounces cream cheese
  • 1 teaspoon grated lemon zest
  • 2 tablespoons sugar
  • ½ cup store-bought jam

Egg Wash

  • 1 egg yolk beaten with 1 tablespoon water

Icing

  • 1 cup powdered sugar
  • 4 to 6 tablespoons heavy cream

Instructions

  1. Prepare the dough by mixing eggs, lukewarm water, yeast, salt, honey, and melted butter in a bowl.
  2. Add flour without kneading and mix until combined, then cover and let rise for 2 hours.
  3. For the cream cheese filling, mix cream cheese, lemon zest, and sugar until smooth.
  4. Dust refrigerated dough with flour, divide in half, and roll out each piece into a rectangle.
  5. Place cream cheese filling and jam in the center of the dough, then cut strips along the sides.
  6. Twist and fold the strips over the filling to create a braid, then repeat with the second loaf.
  7. Let the braided loaves rest for 60 minutes, then preheat the oven to 350°F.
  8. Brush the braids with egg wash and bake for 30 to 35 minutes until golden brown.
  9. Mix powdered sugar and cream to make the glaze, then drizzle over the cooled loaves.
