Strawberry and Blueberry Brioche Dough Danish

Ingredients

Brioche Dough

  • ¾ cup lukewarm water
  • teaspoon granulated yeast
  • teaspoon coarse sea salt or kosher salt
  • 4 large eggs, lightly beaten
  • ¼ cup honey
  • 6 oz unsalted butter, melted
  • cups all-purpose flour

Filling

  • 8 oz cream cheese
  • 1 large egg yolk
  • 3 tablespoon sugar
  • 1 cup blueberries
  • 1 cup sliced strawberries
  • 1 large egg, lightly beaten

Instructions

  1. Mix the yeast, salt, and water in a bowl and mix well.
  2. Add eggs, honey, and melted butter, and mix until blended.
  3. Incorporate flour using a dough hook until mixed; the dough may look loose.
  4. Transfer the dough to another bowl, cover, and let it rise for 2 hours.
  5. Chill the dough for at least 2 hours or overnight.
  6. Rinse and slice strawberries and rinse blueberries.
  7. Mix cream cheese, sugar, and egg yolk until blended.
  8. Divide the dough into 8 small balls and shape them.
  9. Roll out each ball into a rectangle and place the cheese filling in the center.
  10. Top with blueberries or strawberries and cut the sides into strands for a lattice.
  11. Cross the strands over the filling and brush with egg.
  12. Bake at 350°F (177°C) for 20-25 minutes until golden brown.
