Ingredients

The pastry

  • 2 sheets frozen puff pastry, thawed
  • 1 egg beaten
  • ¼ cup coarse sugar

The filling

  • 6 ounces cream cheese, softened
  • 3 tablespoons sugar
  • 1 teaspoon vanilla extract
  • ½ cup pie filling of choice or diced fresh fruit

Instructions

  1. Preheat the oven to 400°F.
  2. Cut 4 circles from each sheet of puff pastry using a 4-inch round cutter.
  3. Score a smaller circle about ½ inch from the edge of each pastry round.
  4. Prick the interior of the smaller circle with a fork.
  5. In a mixer, combine cream cheese, sugar, and vanilla extract, and beat until smooth.
  6. Spread the cream cheese filling inside the smaller circle of each pastry round.
  7. Brush the edges with beaten egg and sprinkle with coarse sugar.
  8. Bake for 17-20 minutes until the edges are golden brown.
  9. Cool and spoon 1 tablespoon of pie filling into the center of each pastry before serving.
