Instructions
- Cook quinoa in a saucepan with water until absorbed, then fluff and set aside.
- Prepare green beans by trimming and cutting them into pieces.
- Toast almond slivers in a skillet until golden and fragrant, then set aside.
- Sauté green beans with salt in the skillet until browned.
- Add garlic to the skillet and cook until fragrant, then combine with green beans.
- Add red onion and water, cover, and cook until green beans are bright green.
- Uncover and increase heat to brown the beans, then remove from heat.
- Combine green beans, quinoa, cherry tomatoes, and corn in a bowl.
- Whisk dressing ingredients together and pour over the salad, tossing to combine.
- Top with toasted almonds and feta before serving.
