Blackened Green Bean and Quinoa Salad

Ingredients

Salad

  • 1 cup quinoa
  • 1 pound long green beans
  • ¼ teaspoon fine salt
  • 3 cloves garlic
  • ¼ cup water
  • ½ medium red onion
  • 1 cup cherry tomatoes
  • 2 ears corn
  • cup sliced almonds
  • up to 4 ounces crumbled feta

Dressing

  • ¼ cup olive oil
  • ¼ cup lemon juice
  • 2 teaspoons Dijon mustard
  • 1 tablespoon chopped fresh basil
  • ½ teaspoon fine salt
  • 10 twists freshly ground black pepper

Instructions

  1. Cook quinoa in a saucepan with water until absorbed, then fluff and set aside.
  2. Prepare green beans by trimming and cutting them into pieces.
  3. Toast almond slivers in a skillet until golden and fragrant, then set aside.
  4. Sauté green beans with salt in the skillet until browned.
  5. Add garlic to the skillet and cook until fragrant, then combine with green beans.
  6. Add red onion and water, cover, and cook until green beans are bright green.
  7. Uncover and increase heat to brown the beans, then remove from heat.
  8. Combine green beans, quinoa, cherry tomatoes, and corn in a bowl.
  9. Whisk dressing ingredients together and pour over the salad, tossing to combine.
  10. Top with toasted almonds and feta before serving.
