Green Bean Salad with Toasted Almonds & Feta

Ingredients

The salad

  • 1 pound green beans, trimmed and cut into 2 to 3” long pieces
  • cup sliced almonds
  • ¼ cup water
  • ½ teaspoon fine sea salt, divided
  • 3 to 4 large basil leaves, torn or chopped, for garnish
  • ¼ cup crumbled feta cheese, divided
  • lemon zest from about ½ lemon for garnish

The dressing

  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon lemon juice (about ½ lemon)
  • 2 teaspoons Dijon mustard
  • 1 small-to-medium clove garlic
  • Several twists to taste freshly ground black pepper
  • a pinch red pepper flakes

Instructions

  1. Toast the sliced almonds in a skillet over medium heat until fragrant and golden, then set aside to cool.
  2. In the same skillet, add the green beans, water, and ¼ teaspoon of salt. Cover and cook until nearly tender.
  3. Remove the lid and increase the heat to medium-high, cooking until the liquid evaporates.
  4. Whisk together the olive oil, lemon juice, mustard, garlic, black pepper, red pepper flakes, and remaining salt.
  5. Combine the cooked green beans with the dressing and half of the feta. Toss to mix well.
  6. Transfer the salad to a serving dish and top with the remaining feta and basil. Garnish with lemon zest and serve immediately.
