Green Bean Salad with Toasted Almonds & Feta

The dressing

extra-virgin olive oil

lemon juice (about ½ lemon)

Dijon mustard

Instructions
- Toast the sliced almonds in a skillet over medium heat until fragrant and golden, then set aside to cool.
- In the same skillet, add the green beans, water, and ¼ teaspoon of salt. Cover and cook until nearly tender.
- Remove the lid and increase the heat to medium-high, cooking until the liquid evaporates.
- Whisk together the olive oil, lemon juice, mustard, garlic, black pepper, red pepper flakes, and remaining salt.
- Combine the cooked green beans with the dressing and half of the feta. Toss to mix well.
- Transfer the salad to a serving dish and top with the remaining feta and basil. Garnish with lemon zest and serve immediately.
