Ingredients

The vegetables

  • 1 tablespoon olive oil
  • ½ small red onion, chopped
  • 2 cloves garlic, chopped
  • 1 lb fresh green beans, ends snapped and washed

The flavorings

  • Juice of one large lemon
  • ¼ cup feta cheese
  • to taste salt
  • to taste pepper

Instructions

  1. Heat olive oil in a large skillet and sauté garlic and onion until tender.
  2. Add green beans to the skillet and stir in lemon juice.
  3. Cover the skillet and cook the green beans until tender, about 5 minutes, stirring at least once.
  4. Transfer the green beans to a bowl or serving platter, top with feta cheese, and season with salt and pepper.
  5. Serve warm, optionally squeezing additional lemon juice before serving.
