Ingredients

The salad

  • 1 pound green beans, trimmed
  • ½ head radicchio, sliced into strips
  • scant ¼ cup thinly sliced red onion
  • 2 ounces goat cheese
  • 2 tablespoons chopped walnuts
  • 2 tablespoons sliced almonds
  • ¼ cup tarragon
  • to taste none flaky sea salt

The dressing

  • to drizzle none honey mustard dressing

Instructions

  1. 1. Boil salted water in a large pot and prepare a bowl of ice water.
  2. 2. Blanch the green beans in boiling water for 2 minutes, then transfer them to the ice water to cool.
  3. 3. Drain the beans and pat them dry.
  4. 4. In a bowl, combine the green beans with radicchio, onion, and some dressing.
  5. 5. Arrange the mixture on a platter and top with dollops of goat cheese, walnuts, almonds, and tarragon.
  6. 6. Drizzle with more dressing, season with flaky salt, and serve.
