Ingredients

  • 24 oz string beans
  • 2.25 oz sliced black olives
  • 3 tablespoons balsamic vinegar
  • 3 tablespoons extra virgin olive oil
  • 3 medium scallions
  • ¾ teaspoon kosher salt
  • to taste fresh black pepper
  • 5 hard boiled eggs

Instructions

  1. Boil water in a large pot and add the green beans, cooking until tender crisp.
  2. Drain the beans and rinse them under cold water to stop the cooking process.
  3. In a large bowl, combine balsamic vinegar, olive oil, salt, and pepper.
  4. Add the green beans, scallions, and olives to the bowl and toss to combine.
  5. Top the salad with sliced hard boiled eggs.
  6. Refrigerate and serve chilled or at room temperature.
