Green Bean & Tomato Salad

Ingredients

The salad

  • 1 lb green beans
  • cups small tomatoes, quartered
  • 5 leaves basil, thinly sliced
  • ¼ cup crumbled feta cheese (optional)

The dressing

  • 3 tbsp extra virgin olive oil
  • 3 tbsp red wine vinegar
  • 1 clove crushed garlic
  • 2 tbsp diced onion
  • to taste kosher salt and pepper

Instructions

  1. Rinse, trim, and cut green beans into 1-inch pieces.
  2. Steam the green beans for 2-4 minutes until al dente.
  3. Shock the green beans in ice water to stop cooking and retain color.
  4. Dry the beans and transfer them to a large bowl, then add tomatoes.
  5. In a small bowl, whisk together olive oil, vinegar, garlic, onion, salt, and pepper.
  6. Pour the dressing over the green beans and tomatoes, and gently toss.
  7. Adjust seasonings as needed and finish with fresh basil.
