Green Bean & Tomato Salad

The dressing

extra virgin olive oil

red wine vinegar

Instructions
- Rinse, trim, and cut green beans into 1-inch pieces.
- Steam the green beans for 2-4 minutes until al dente.
- Shock the green beans in ice water to stop cooking and retain color.
- Dry the beans and transfer them to a large bowl, then add tomatoes.
- In a small bowl, whisk together olive oil, vinegar, garlic, onion, salt, and pepper.
- Pour the dressing over the green beans and tomatoes, and gently toss.
- Adjust seasonings as needed and finish with fresh basil.
