Ingredients

  • pounds fresh green beans
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • 2 tablespoons feta cheese
  • ½ cup thinly sliced red onions
  • 1 teaspoon fresh or dried basil
  • to taste salt
  • to taste pepper
  • 2-3 tablespoons red cherry tomatoes

Instructions

  1. 1. Boil about 6 cups of water in a large pot.
  2. 2. Add the green beans to the boiling water and cook for 2-3 minutes until bright green and crisp.
  3. 3. Remove the green beans and rinse them with cold water, then dry.
  4. 4. In a large bowl, combine the green beans with balsamic vinegar, olive oil, feta cheese, cherry tomatoes, basil, sliced onions, salt, and pepper.
  5. 5. Stir to combine all ingredients.
  6. 6. Chill in the fridge for 45 minutes before serving.
