Balsamic Green Beans with Bacon

Instructions
- Boil a large pot of water and blanch the green beans for 2-3 minutes, then transfer them to ice water.
- Once cooled, remove the green beans and place them on a paper towel-lined plate.
- In a skillet, cook the bacon over medium heat for 6-8 minutes until crispy, then transfer to a paper towel-lined plate.
- Drain excess bacon fat from the skillet, leaving 1 tablespoon, and add olive oil.
- Sauté the green beans in the skillet for 1-2 minutes until lightly browned.
- Add balsamic vinegar, salt, and black pepper to the green beans and simmer until the vinegar evaporates.
- Stir in the bacon and honey (if using) and serve immediately.
