Ingredients

The green beans

  • 1 pound fresh green beans, trimmed

The bacon

  • 5 strips bacon, chopped

The sauce

  • 1 tablespoon olive oil
  • 3 tablespoons balsamic vinegar
  • ½ teaspoon coarse salt
  • ½ teaspoon ground black pepper
  • 1 tablespoon honey (optional)

Instructions

  1. Boil a large pot of water and blanch the green beans for 2-3 minutes, then transfer them to ice water.
  2. Once cooled, remove the green beans and place them on a paper towel-lined plate.
  3. In a skillet, cook the bacon over medium heat for 6-8 minutes until crispy, then transfer to a paper towel-lined plate.
  4. Drain excess bacon fat from the skillet, leaving 1 tablespoon, and add olive oil.
  5. Sauté the green beans in the skillet for 1-2 minutes until lightly browned.
  6. Add balsamic vinegar, salt, and black pepper to the green beans and simmer until the vinegar evaporates.
  7. Stir in the bacon and honey (if using) and serve immediately.
