Ingredients

The salad

  • 2 pounds green beans, trimmed
  • 1 cup halved cherry tomatoes
  • ¼ cup feta cheese

The vinaigrette

  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon minced shallot
  • ½ teaspoon dried oregano
  • to taste salt
  • to taste freshly ground black pepper

Instructions

  1. 1. Boil a large pot of water and cook the green beans for about 4 minutes until bright green.
  2. 2. Transfer the green beans to a bowl of ice water to stop the cooking process.
  3. 3. In a small bowl, whisk together the olive oil, red wine vinegar, shallot, oregano, salt, and pepper.
  4. 4. Drain the green beans and blot them dry.
  5. 5. Arrange the green beans and cherry tomatoes in a serving dish.
