Instructions
- 1. Boil a large pot of water and cook the green beans for about 4 minutes until bright green.
- 2. Transfer the green beans to a bowl of ice water to stop the cooking process.
- 3. In a small bowl, whisk together the olive oil, red wine vinegar, shallot, oregano, salt, and pepper.
- 4. Drain the green beans and blot them dry.
- 5. Arrange the green beans and cherry tomatoes in a serving dish.
- 6. Pour the vinaigrette over the salad and toss gently.
- 7. Top with feta cheese and serve immediately or refrigerate for up to 4 days.
