Bean Salad

Ingredients

The salad

  • 1 cup red wine vinegar
  • ¾ cup granulated sugar
  • ½ cup olive oil
  • 2 cloves garlic, minced
  • 1 15 ounce can cut green beans, drained
  • 1 15 ounce can cut yellow wax beans, drained
  • 1 15 ounce can kidney beans, drained and rinsed
  • ½ cup red onion, chopped
  • ¼ cup fresh parsley, minced

Seasoning

  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Combine vinegar, sugar, oil, garlic, salt, and pepper in a small saucepan and heat until sugar dissolves.
  2. Pour the mixture into a large bowl.
  3. Add green beans, wax beans, kidney beans, red onion, and parsley to the bowl and toss to coat.
  4. Cover and refrigerate for at least 4 hours or overnight.
  5. Remove from the refrigerator 30 minutes before serving to bring to room temperature.
