Ingredients

The salad

  • 12 oz fresh green beans
  • 1 can dark red kidney beans
  • 1 can light red kidney beans
  • 1 yellow bell pepper yellow bell pepper
  • ½ cup chopped red onion
  • ¼ cup chopped fresh parsley

The dressing

  • cup olive oil
  • ¼ cup white wine vinegar
  • 3 Tbsp honey
  • 2 tsp Dijon mustard
  • ¾ tsp salt

Instructions

  1. Whisk together the olive oil, white wine vinegar, honey, Dijon mustard, and salt; set aside.
  2. Boil the green beans for 3 to 4 minutes until tender, then drain and transfer to a bowl of ice water.
  3. Add the green beans, dark and light red kidney beans, yellow bell pepper, red onion, and parsley to a salad bowl.
  4. Pour the dressing over the salad mixture and toss to coat.
