Ingredients

The salad

  • 1 19-oz can Chickpeas
  • 1 19-oz can White beans
  • 1 19-oz can Red beans
  • 1 large Bell pepper (diced)
  • 2 ribs Celery (sliced)
  • 2 medium Shallots (minced)
  • ¼ cup Fresh parsley (chopped)

The dressing

  • cup Olive oil
  • 2 tbsp Lime juice
  • 1 ½ tbsp Dijon mustard
  • ¼ tsp Sea salt (to taste)
  • ¼ tsp Black pepper (to taste)

Instructions

  1. Rinse and pat dry the chickpeas, white beans, and red beans.
  2. In a large bowl, combine all three types of beans, diced bell pepper, sliced celery, minced shallots, and chopped parsley.
  3. In a small bowl, whisk together the olive oil, lime juice, and mustard.
  4. Pour the dressing over the salad and toss to combine. Season with salt and pepper to taste.
  5. Refrigerate for 30 minutes to let the flavors develop, then serve cold.
