Instructions
- Rinse and pat dry the chickpeas, white beans, and red beans.
- In a large bowl, combine all three types of beans, diced bell pepper, sliced celery, minced shallots, and chopped parsley.
- In a small bowl, whisk together the olive oil, lime juice, and mustard.
- Pour the dressing over the salad and toss to combine. Season with salt and pepper to taste.
- Refrigerate for 30 minutes to let the flavors develop, then serve cold.
