Ingredients

The salad

  • 3 cups cooked wild rice blend
  • 1 14-ounce can kidney beans
  • 1 14-ounce can garbanzo beans
  • 1 14-ounce can black beans
  • 1 medium red bell pepper
  • 1-2 medium jalapeños
  • ½ medium red onion
  • ½ cup freshly chopped cilantro

The dressing

  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon honey
  • 2 medium limes
  • ½ teaspoon kosher salt

Instructions

  1. Combine the salad ingredients in a large mixing bowl.
  2. In a separate bowl, whisk together the dressing ingredients.
  3. Pour the dressing over the salad and toss gently to combine.
  4. If time allows, refrigerate for 1 hour before serving to enhance flavor.
