Quinoa Black Bean Salad

Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Cut the cherry tomatoes in half or quarter them if they are large.
- In a medium bowl, combine the tomatoes, olive oil, maple syrup, crushed red pepper, and sea salt.
- Toss gently and arrange the tomatoes cut side up on the prepared baking sheet.
- Roast the tomatoes for 55 to 60 minutes.
- In a large bowl, combine the roasted tomatoes with black beans, quinoa, walnuts, salt, and lemon juice.
- Top with feta and adjust seasonings to taste.
