Ingredients

The salad

  • 1 cup quinoa, uncooked
  • 2 cups water
  • 15 oz can of black beans, rinsed
  • ΒΌ cup red onion, minced
  • 2 cups your favorite chopped vegetables (e.g., cucumber, carrots, tomato, avocado, kale)

The dressing

  • 1 serving Avocado Cilantro Lime Dressing

Instructions

  1. In a medium saucepan, bring quinoa and water to a boil.
  2. Reduce heat to low, cover, and let simmer for 20 minutes or until all water is absorbed.
  3. Once cooked, chill the quinoa in the refrigerator for 2 hours.
  4. Prepare the dressing as per the instructions for the Avocado Cilantro Lime Dressing.
  5. In a large mixing bowl, combine all salad ingredients, mix well, then add the dressing and mix again.
