The dressing

Avocado Cilantro Lime Dressing
Instructions
- In a medium saucepan, bring quinoa and water to a boil.
- Reduce heat to low, cover, and let simmer for 20 minutes or until all water is absorbed.
- Once cooked, chill the quinoa in the refrigerator for 2 hours.
- Prepare the dressing as per the instructions for the Avocado Cilantro Lime Dressing.
- In a large mixing bowl, combine all salad ingredients, mix well, then add the dressing and mix again.
