Ingredients

The salad

  • 2 ½ cups cooked and cooled quinoa
  • 2 cups cherry tomatoes, quartered
  • 1 cup orange or red bell pepper, finely diced
  • cup finely diced red onion
  • 1 can (15-oz) black beans, drained and rinsed
  • 3 ears fresh corn, kernels removed
  • ½ cup finely chopped cilantro

The dressing

  • 4-5 Tbsp lime juice
  • 2 Tbsp olive oil
  • 2 tsp maple syrup
  • 1 ¼ tsp sea salt

For serving (optional)

  • 1 medium avocado, finely diced
  • ¼ cup pepitas

Instructions

  1. Prepare quinoa if not already cooked by combining dry quinoa and water in a saucepan, bringing to a boil, then simmering until water is absorbed.
  2. In a large bowl, combine cherry tomatoes, bell pepper, red onion, black beans, corn, and cilantro.
  3. Add the cooked quinoa to the bowl along with lime juice, olive oil, maple syrup, and salt, mixing well.
  4. Taste and adjust seasoning as needed.
  5. Serve at room temperature or chilled, optionally garnishing with avocado and pepitas.
