Simple Quinoa Black Bean Salad

Instructions
- Prepare quinoa if not already cooked by combining dry quinoa and water in a saucepan, bringing to a boil, then simmering until water is absorbed.
- In a large bowl, combine cherry tomatoes, bell pepper, red onion, black beans, corn, and cilantro.
- Add the cooked quinoa to the bowl along with lime juice, olive oil, maple syrup, and salt, mixing well.
- Taste and adjust seasoning as needed.
- Serve at room temperature or chilled, optionally garnishing with avocado and pepitas.
