Quinoa Black Bean Salad

black beans, drained and rinsed

avocado (semi-firm but ripe), cored and diced
Instructions
- Rinse quinoa well and cook in chicken broth with a bit of water and salt until absorbed, about 15-20 minutes.
- Let the quinoa cool.
- Whisk together olive oil, lime juice, honey, cumin, ginger, and cayenne in a bowl.
- In a large bowl, combine quinoa, black beans, mango, bell pepper, green onions, cilantro, avocado, and the dressing.
- Season with salt to taste and serve.
