Eggplant Mozzarella Sandwiches

Instructions
- Cube the eggplant into ½-inch cubes and mince the garlic.
- Heat 2 Tbsp of olive oil in a large skillet over medium heat, add garlic, and sauté for 1-2 minutes.
- Add cubed eggplant and Italian seasoning, sauté until eggplant is soft (5-7 minutes).
- Stir in marinara sauce and heat through (3-5 minutes), then season with salt.
- Preheat the broiler and prepare a butter and garlic powder mixture with the remaining olive oil.
- Brush the mixture over the cut surfaces of the rolls and broil until golden brown (about 5 minutes).
- Switch the oven to bake at 350ºF, pile eggplant mixture onto the toasted rolls, and top with mozzarella.
- Bake until the mozzarella is melted (about 5 minutes), then serve hot.
