Instructions
- Preheat the oven to 400ºF and line a baking sheet with parchment paper.
- Slice the eggplant into rounds, about ¼ to ½ inch thick.
- Arrange the slices on the baking sheet and lightly brush with olive oil, then sprinkle with salt.
- Bake the eggplant until tender and easily pierced with a fork, about 15 minutes.
- Remove from the oven and add marinara sauce and cheese to each slice.
- Return to the oven and bake until the cheese is melted, about 5 to 8 more minutes.
- Serve warm, garnished with fresh basil if desired.
