Eggplant Pizza

Ingredients

The base

  • 1 pound eggplant
  • 1 tablespoon extra-virgin olive oil
  • to taste salt

The toppings

  • ¼ cup marinara sauce
  • ¾ cup shredded mozzarella
  • to taste fresh basil

Instructions

  1. Preheat the oven to 400ºF and line a baking sheet with parchment paper.
  2. Slice the eggplant into rounds, about ¼ to ½ inch thick.
  3. Arrange the slices on the baking sheet and lightly brush with olive oil, then sprinkle with salt.
  4. Bake the eggplant until tender and easily pierced with a fork, about 15 minutes.
  5. Remove from the oven and add marinara sauce and cheese to each slice.
  6. Return to the oven and bake until the cheese is melted, about 5 to 8 more minutes.
  7. Serve warm, garnished with fresh basil if desired.
